About me
Thomas DeRosa is an Associate Professor of Culinary Arts in the College of Food Innovation & Technology (CFIT) at Johnson & Wales University in Charlotte, North Carolina. A graduate of culinary and hospitality institutions—including The Culinary Institute of America (New York), The New England Culinary Institute (Vermont), and Johnson & Wales University (Rhode Island)—he brings nearly four decades of industry and academic experience to the classroom.
His 39-year career includes executive leadership roles across the foodservice, hospitality, and education sectors. For the past 14 years, Professor DeRosa has been a full-time instructor at JWU, where he mentors students in culinary skills development, professional standards, and career readiness.
He is currently in the final dissertation phase of his doctoral studies at the American College of Education, where his research focuses on Curriculum and Instruction, with an emphasis on assessment practices in culinary education.
