Chef Hugh Cossard is a French-trained chef and culinary educator with more than four decades of industry experience. Born in France’s Loire Valley, he began his career in his family’s charcuterie and catering businesses before training at the École Nationale Supérieure des Métiers de Bouches in Paris. After moving to the United States in 1989, he worked in professional kitchens and French-style restaurants before transitioning into culinary education.Chef Cossard previously served as Associate Program Director for the School of Culinary and Hospitality at Stratford University and is the founder of FoodExpression Concept. In 2024 he was awarded the Chevalier de l’Ordre du Mérite Agricole, one of France’s highest honors in agriculture and gastronomy.As Director of Education at the Metropolitan Culinary Arts Institute, Chef Cossard brings classical French technique, real-world restaurant experience, and a passion for mentorship to the next generation of culinary professionals.
